How is Citric Acid produced?
Citric acid is the most important organic acid produced in tonnage, as it has a wide range of applications. It is extensively used within the food and beverage industries to provide flavor, act as a preservative, and to adjust the acidity of food products.
In addition, it is also an essential component of many pharmaceuticals, as it helps to increase solubility and bioavailability.
The production of citric acid is highly regulated and its quality must meet stringent standards before it can be used in any applications. By meeting these standards, citric acid ensures that the products using it are safe for consumption.
This product is is produced mainly by submerged fermentation; using Aspergillus Niger or Candida sp. It is an organic carboxylic acid; and it can be extracted from the juice of citrus fruits. This is done by adding calcium oxide; which forms calcium citrate.
This creates an insoluble precipitate that can be collected by filtration; the acid can be recovered form its calcium salt by adding sulphuric acid.
General Uses in Food
